I make this at least once a week. Super simple and takes about 10 minutes once the beans are cooked. Cooking the beans takes 11 minutes after soaking for about 8 hours or so.
Ingredients:
1 cup dried Non-GMO Dried Barbanzo beans retain 1/4 cup liquid from cooking, see recipe below this recipe for cooking beans.
1/4 cup Organic tahini
Juice of 1 or 2 lemons
1/4 cup olive oil (more or less if desired)
3 or more cloves garlic
1 bunch of parsley and plenty of salt
Process:
I start with the lemon, tahini, garlic and salt and combine in the work bowl of the Cuisinart Food processor. Process with metal blade, and add about half the parsley with the cooked beans including the reserved liquid. Process until you have the consistency you like, add a bit more parsley if you would like after tasting for salt and processing one last time before chilling. Chill, serve and enjoy! I like to serve it with a drizzle of olive oil, paprika, and cumin.
